Whitney received her master’s degree in Dietetics Administration from the University of Kentucky. Here, she was a data contributor for the international research program and specialized in Food Insecurity for indigenous communities in South America. After graduate school, her career lead her to Louisville, where she worked as a research coordinator over phase 1-4 diabetes and cholesterol trials at L-MARC Research Center. Her passion for food and nutrition didn’t stop here. In 2016, this health & wellness, self-proclaimed foodie decided to start Don’t Skip A Meal, a nutrition consulting business focusing on meal planning, grocery store tours, and recipe subscriptions. For several years, Whitney has worked as a certified diabetes educator at the Wendy Novak Diabetes Center. She leads the nutrition kitchen classroom program, participates in pediatric diabetes research, publishes nutrition articles for Norton Healthcare, and most importantly, provides daily education on diabetes management in a pediatric patient population. Whitney has an extreme passion for traveling and spending time outdoors with her husband and dog.
